Anita Jaisinghani, The chef & co-owner of Pondicheri, was born and raised in India and is of Sindhi descent. She developed a love for food early on in her life however trained and practiced as a microbiologist.
Transitioning as a stay-at-home mother for her two children in Canada first and then in Houston, she gradually developed her love of food into a career, beginning with an out-of-home catering business & selling chutneys through Whole Foods.

In this class, you'll learn to prepare several essentially Southern dishes served with a side of history, cooking techniques and authentic regional recipes that you can easily re-create at home. These tried and true Southern favorites are a necessary addition to your culinary repertoire!
This class gives you a taste of several seasonal seafood offerings (menu will vary depending on the freshest catch of the day), prepared by Atrium Kitchen Executive Chef Traci Calderon.
We’ll be enjoying 3 different oyster varieties from the North Carolina coast, provided by Locals Seafood, along with wine, beer, or non-alcoholic beverage pairings. You’ll learn the basics of shucking and get creative suggestions for toppings, beyond cocktail sauce.
In this class, you will learn how to prepare these dishes, discussion what types of fish pair best with each other and other ingredients, so that you may appreciate this tradition and carry it on.
