The summer rolls are prepared using poached prawns with lettuce, cucumber, carrot, vermicelli noodles and herbs wrapped in thin rice paper and served with dipping sauce. This baked fish recipe originates from a Malaysian Portuguese settlement in Malacca.
The paste used to prepare the fish is made of rich Malaysian herbs and spices and the fish is wrapped in a banana leaf before baking. The Thai stir-fry includes prawns, mussels and squid stir-fried with fresh Thai basil leaves. Chef Norman will show how to prepare the seafood including scoring the squid.
The dishes will be served with jasmine rice as a final meal.
