Join Stefan Milne in this class, where he’ll explore some of the history and tradition of Greek cooking while demystify cooking with open flame — burning things is okay! On the menu: whole grilled rockfish wrapped in grape leaves and stuffed with rice, pine nuts, raisins, and herbs; grilled pita with melitzanosalata (grilled eggplant spread);
taramasalata (bread and fish roe dip); and kathoura (fresh goat cheese from Icaria) with grilled stone fruit, tomatoes, almonds, herbs, and honey.
