Master the art of sushi making from expert chef Lilian Hiw, This sushi making workshop gives you the opportunity to create different types of sushi from Maki to Onigiri.
In this workshop, you will learn the art of cooking the perfect sushi rice and making sushi vinegar. Master knife and cutting skills as well as the use of bamboo mats to make sushi rolls and inverted sushi rolls. You will make hand-shaped sushi and learn presentation and plating skills. We’ll even guide you through using chopsticks and how different sushi should be eaten.
Lilian’s courses are fun, informative, and interactive; with detailed easy-to-follow recipes to replicate at home using ingredients that are readily available.
Recipes in this course may include:
Maki Roll – Toasted nori (seaweed) wrapped around vinegared rice and cucumber
Temaki – Hand-rolled cone sushi filled with a selection of avocado, crab sticks, cucumber, and Japanese mayo
California Roll – An inverted maki roll with lemon mayo tuna and avocado with toasted black and white sesame seeds
Nigiri – Hand-shaped finger sushi selection; smoked salmon, nori tuna mayo, and sweet rolled omelet with seaweed strip
Onigiri – Pyramid-shaped sushi with a hidden treasure of teriyaki chicken
Yaki Onigiri – Tasty grilled rice balls painted with miso paste
Tamagoyaki – Japanese rolled sweet omelet
The course will run from 10 am until 12.30 pm and includes practical and demonstration cookery sessions and refreshments. All the ingredients, equipment, and recipes will be provided.
We are based in the heart of Suffolk, in a picturesque setting at Kenton Hall Estate. The estate boasts a wedding venue, glamping site and 180 Hectare mixed arable and livestock farm. The school was built in a converted cow byre which also houses a butcher with smokehouse and curing facilities as well as a commercial kitchen. The cookery school was opened in 2014, it has recently been refurbished in 2023 and is now a Miele partnership cookery school.
The kitchen is fully equipped with dedicated work stations for up to 12 people. There is a chef tutor station with camera and screens in the kitchen for demonstrations. When the school was designed we wanted students to feel welcome and at home, but also experience the professional feel of a highly performing kitchen.
The school offers a relaxed, informal setting where people of all abilities can come and learn, eat and make some great memories. We have partnered with some of the industries top brands including Kenwood and Oxo, you will be sure to only use the best in equipment on your course with us.

Our cookery courses in the East Midlands include a short demonstration followed by "hands-on" cooking with tutoring to your own specific requirements. Recipes and ingredients are all provided.

Firstly, our chef will show everyone the techniques of preparing and cooking your own Sumeshi sushi rice. Then the class will be shown how to prepare a range of different sushi, beginning by making your very own cured Salmon and Cucumber Nori Maki roll, accompanied with Japanese Miso Noodle Soup.
