Everything you ever need to know about choosing, storing, sharpening, holding, and using the most important tool in the kitchen. We will have 8-inch chef's knives for you to practice on, but you are also welcome to bring your own knife.
Included in the price is a knife sharpening stone of your own, which we will teach you how to use flawlessly before you leave.
And so you have something to cook (and eat!) with all your expertly chopped ingredients, we'll also make a meal to share at the end of class, usually a minestrone soup or a vegetable stir-fry.
Home Cooking New York (HCNY) was founded in May 2002, shortly after founder Jennifer Clair was downsized from her Food Editor position at Martha Stewart Living.
After years of writing cookbooks, recipes, and food editorials, the opportunity to come together with eager culinary students in a kitchen classroom seemed like the next logical step.
Back then, Jennifer was the sole chef-instructor, teaching nightly private cooking classes in students’ home kitchens all over New York City. Over the last 17 years.
The company has grown to include 5 outstanding chef-instructors, all ready to be dispatched into the home kitchens of the (reasonably-distanced) tri-state area.
During this hands-on class, you will learn with Certified Executive Chef C. David Wolf the most common cuts including slicing, rock chopping, dicing, back slicing, bias cuts, and peeling of round and hard-to-handle foods.
The first thing any chef needs to know is how to correctly use the most important tool in the kitchen. This is a hands-on class, and will equip you with the skills and knowledge to be a more confident cook!
Come learn the classic French knife techniques used in professional kitchens. This is specifically knife skills, not a cooking class.
Master your knife and up the ante on your cooking skills. In this class the instructor will review chopping, dicing, chiffonade, julienne and more!
A “Must-Take” class! Hone your skills in this most important cooking technique class. Knowing how to handle and care for your knives the right way will change how you cook.
