Everything you ever need to know about choosing, storing, sharpening, holding, and using the most important tool in the kitchen. We will have 8-inch chef's knives for you to practice on, but you are also welcome to bring your own knife.
Included in the price is a knife sharpening stone of your own, which we will teach you how to use flawlessly before you leave.
And so you have something to cook (and eat!) with all your expertly chopped ingredients, we'll also make a meal to share at the end of class, usually a minestrone soup or a vegetable stir-fry.
Home Cooking New York (HCNY) was founded in May 2002, shortly after founder Jennifer Clair was downsized from her Food Editor position at Martha Stewart Living.
After years of writing cookbooks, recipes, and food editorials, the opportunity to come together with eager culinary students in a kitchen classroom seemed like the next logical step.
Back then, Jennifer was the sole chef-instructor, teaching nightly private cooking classes in students’ home kitchens all over New York City. Over the last 17 years.
The company has grown to include 5 outstanding chef-instructors, all ready to be dispatched into the home kitchens of the (reasonably-distanced) tri-state area.
Designed for the ultimate culinary enthusiast, this unique chef-driven, chef-inspired series goes beyond the basics to teach you the foundational knowledge and techniques taught in professional culinary programs.
Come learn the essentials of how to bone a chicken, cut meat, and filet fish. We will also cover basic use of different knives and classic vegetable cuts, as well as hot to sharpen knives.
An important element of enjoying your time in the kitchen is your skill and ease of preparing the ingredients. Learning the basics of safe knife handling and the basic cutting techniques will be enjoyable and make you more efficient.
Knife Skills is our most popular class! This hands-on chopping session will have you mincing, slicing, and dicing vegetables and herbs like a pro. Knife care, sharpening and honing, and selection and manufacturing are also covered by our chef.
Knowing how to use knives skillfully is the foundation of all cooking, and doesn't have to be scary or frustrating. Many home and even professional cooks don't always wield a knife correctly, however, which increases food preparation time and makes the process harder.
