The past decade sparked the city of Austin to become the fastest growing food-city in America. These years also sculpted a young chef, as he stockpiled knowledge and experience from five cities across the United States. Ryan Francis smelled the opportunity coming from Austin, and found himself at Bryce Gilmore's well-loved restaurant Odd Duck in 2014.
Over the next year and a half, he learned how Gilmore and his team approached farm-to-table cuisine utilizing various classic and modern techniques. Armed with invaluable knowledge, and wood-fired passion for the craft, he decided to venture from the Odd Duck.
Gather & Forge is now laying the groundwork for like-minded chefs to nourish hungry clients, showcase their talent, and strengthen the connection between local farmers and anyone who enjoys a good bite or more.
In this Awesome class lead by Chef Monica Bolsoni, you will learn the proper use of at least five knives, while making a dreamy meal of fresh fish (you will learn how to filet), shish kabab, tzatziki, hummus and fresh mint salad.
They say a chef's best tools are his or her hands, but a good, sharp knife is a close second. In this hands-on class, you'll learn all about kitchen knives, from selecting the right one for the job, keeping it sharp, and how to use it.
Basic knife skills are important, whether a veteran cook or a beginner, everyone can use some basic training with kitchen knives. Class includes demonstration by one of our chef instructors, Andrew Schmidt, followed by practical skills of various cuts of fruits and vegetables, herbs and garlic.
How many times have you tried to cut an onion and found yourself struggling against the ineffective feeble edge of a dull knife? The truth is, no matter how much you spend on a knife, it is worthless in the kitchen unless it has a well-honed blade.
Knife Sharpening Class is offered by Chef Eric's Private Dining for all ages and skill levels. Each class includes recipe printouts, generous tastings and, your choice of demonstration or hands-on format.
