For this class, you will need couscous, cucumber, tomatoes, fresh parsley, fresh mint, scallions, lemons, olive oil, salt, and pepper. Optional mix-ins/toppings: capers, olives, chickpeas, rotisserie chicken, grilled shrimp, roasted cauliflower, pickles, pickled onions, baby greens, hard-boiled egg, tahini, etc.
