Square Food Foundation started life in 1998 when Barny taught his first cookery class at his restaurant, Quartier Vert on Whiteladies Road in Bristol.
QV Cookery School (as it was then known) quickly gathered pace and popularity and was soon offering a busy programme of classes and courses to people from all walks of life.
In this class we are going to make a traditional Panna Cotta with vanilla, A light and airy Ciabatta, Biscotti with almonds and lemons and my all time favorite tart, Pine nut & honey.
You will start by making a perfect mushroom risotto and follow this with a classic autumnal minestrone with pumpkin. Primi will be an Involtini (beef olives) in a tomato sauce with garlic and olive oil potato puree (vegetarian options available).
Of course, there’s absolutely nothing wrong with opening a bag of dried pasta – I do it every week – but I’d love you to try making your own. It’s fun, therapeutic and an amazing way to level-up a special meal – you don’t even need any special equipment!
