My experience goes back fifty years in the hospitality industry, as a Chef, Chef Instructor at T.A.F.E. and several food related businesses which I have owned and operated. My passion is cooking and the greatest satisfaction I gain is from imparting the knowledge and skills I have, onto people who share the same passion for cooking and entertaining.
I have represented Australia in the world renowned Culinary Olympics in Germany and have won more than forty medals, thirty of them gold, in various cooking competitions in Australia and overseas.

We will teach you how to cook crepes in the European tradition or fluffy American style pancakes. There will be several options for fillings and toppings. Also, we will show how to make homemade cottage cheese, Philadelphia and mascarpone cheese. You’ll be surprised at how easy it is to do!
Learn the process behind making a variety of choux pastry products including our most popular retail item – the chocolate éclair. You will learn how to make perfect choux pastry, bake French pastry classics, pipe luscious fillings, and garnish before devouring your creations.
Fluffy, gooey, cinnamon pillows await you in this class with our resident baker (we don’t recommend actually laying your head on them, just putting them in your mouth).
This qualification describes the skills and knowledge of a pastry cook who bakes cake, pastry and biscuit products working in a commercial baking environment.
