Learners will learn how to prepare a traditional meat stew menu served as a Sunday meal across the Caribbean. Over the 4 weeks we will plan, prepare, cook and present 4 dishes:
Brown Stew Chicken/Pork
Macaroni Pie,
Potato Salad
Callaloo (Spinach Soup)
By the end of the course, you will:
Apply food safety and nutrition principles the in preparation of a Sunday meal.
Plan and prepare ingredients for a creole menu
Cook four traditional West Indian dishes
Serve a complete Sunday meal creole meal
Resources required by attendees:
Seasoning/marinade: coriander, salt, sugar, spring onions, garlic, onions & tomato
Main Ingredients: 1 kg chicken/pork, 250 mls oil, 1 kg potatoes; 0.5 kg mixed vegetables, 1 small bottle mayonnaise, 0.5 kg macaroni, 250g cheddar cheese, 2 eggs, 250g spinach, 1 tin coconut milk.

Inspire: Culture, Learning and Libraries is a charitable community benefit society delivering cultural and learning services across Nottinghamshire. The society is owned and controlled by its members. Members are drawn from the community, and all staff become members of the society when appointed. We're an Arts Council England National Portfolio Organisation, which means funding thanks to taxpayers and National Lottery players plays a huge part in supporting our work.
Inspire became a National Portfolio Organisation (NPO) in 2018 resulting in a £1.2M investment between 2018 – 2023 from Arts Council England to deliver a cultural programme through the library service. Inspire are delighted to remain part of the National Portfolio for 2023-2026 and will receive £504,599 each year for this three-year period.
Inspire is also the host organisation for the Cultural Education Partnership (CEP) for Ashfield and Mansfield.
We deliver services from 67 buildings across Nottinghamshire and 4 vehicles, have over 750 people working for us and have an annual turnover of £17.2M.

Over the course of the day I can show you how to mix spices, make different types of sauces, how to prepare all the ingredients and finally cook the dishes of your choice to a high standard.
This event is were the ticket price is for two people and you and your guest work together to create a delicious Indian Menu. Gol Gappa to start, fresh breads, curries, chutneys, pilau and Pakoras with Pineapple and coconut for dessert. We eat in the dining room with wine, beer and soft drinks.
It’s really not hard to see why this is one of our most sought after classes. To begin, under excellent tutelage by one of our experience chefs, you will make classic ‘Pyaaz Pakoras’, with a delicious ‘Dhaniya-Pudina chutney’, and a spicy coriander and mint dip.
