In this workshop we will discuss the science of safe canning, and how to make the best seasonal preserves (using less sugar and little or no pectin). Camilla will expertly demonstrate how to prepare one seasonal jam recipe and one marmalade recipe.
You will leave the class with a jar of each preserve (aka stocking stuffers) plus a bonus candied peel recipe, ready to tackle any jam-making project, and able to safely and creatively concoct your very own recipes.
Over the years at Duchess we’ve had many people ask us for classes. Atelier arose directly out of that demand and our own core mandate of encouraging and fostering the tradition of baking.
The classes are focused in their scope and are designed to give you the maximum amount of hands on experience to master specific techniques.

Our teachers have all worked in the kitchens at Duchess and are a diverse group ranging from home bakers to professionally trained pastry chefs.
We are all united in our desire to teach and help people gain confidence in their baking skills.
What will I learn? We will teach 2 jam making processes – the traditional method as well as freezer jam. The traditional jam and jelly process is a cooked jam that is put in jars and then sealed in a hot-water bath.
The classes are very hands-on, light hearted and fun and you leave with the basic understanding of how to preserve safely in your own home and more importantly you get to take home the recipe and a jar of what gets made in the class.
In this workshop you will learn the basics to making homemade cooked jams. You will learn what basic equipment you need to start canning at home. We will be making 3 jam recipes allowing you to take a sample of each home to enjoy.
