During a full day we will preserve them in every way possible from Italian passata sauce, bottled whole, ketchup, chutney and conserva (paste), with the day’s labours divided among guests to stock their home larder.
The Agrarian Kitchen Cooking School & Farm offers paddock-to-plate cooking experiences in a 19th century schoolhouse at Lachlan, 45 minutes from Hobart in Tasmania’s Derwent Valley, Australia.
The Agrarian Kitchen was established by Rodney Dunn and his wife, Séverine Demanet who moved from Sydney to Tasmania in July 2007 to transform the schoolhouse into Tasmania’s first hands-on, farm-based cooking school. Cooking classes commenced in November 2008.
Set on five acres, The Agrarian Kitchen is a working farm and incorporates an extensive vegetable garden, orchard, berry patch and herb garden, all grown using organic principles. Also in residence are rare-breed Wessex Saddleback and Berkshire pigs, Barnevelder chickens a flock of geese and honeybees.
The Agrarian Kitchen grows and uses heirloom varieties of fruit, vegetables and rare breed animals in its cooking classes and also sources ingredients from local farmers, fishermen, gardeners and artisan producers.
Cooking classes are led by Rodney Dunn, former Food Editor of Australian Gourmet Traveller magazine and one-time apprentice to Australian chef, Tetsuya Wakuda, as well as a supporting cast of Tasmanian cooks and producers.
In June 2017, Rodney and Séverine opened The Agrarian Kitchen Eatery located 7 minutes down the road in New Norfolk.
We will make and try three different kinds of this beautiful creation such as "Focaccia Romana" from Rome, "Focaccia Barese" which we think is the most loved one in Italy, and a "Mystery box Focaccia" which we will reveal on the day.Â
With any skill level and at any age you can learn how to make fresh pasta & gnocchi from scratch and prepare several sauces to accompany the different types of pasta. A hands on experience teaching how to make the dough, roll and cut to create an array of pasta, both long and filled.
On arrival to the class, you will be offered a glass of wine and then given a brief on safety and orientation. More thannjust watching a chef showing how its done, this lesson is super hands on, so you get to practice before going home to show off for family and friends.
Traditional potato gnocchi from scratch and how you can use in two ways: We'll be making sauteed prawns with gnocchi and a fabulous baked three-cheese sauce. Grab some friends and make a night of it!
Sicilian Classes are offered by Michelina Lawson Catering for all ages and skills. Enjoy a private cooking class in your own home with friends and family. After learning to cook your favourite dishes, you'll sit down and enjoy all of your creations.
