My experience goes back fifty years in the hospitality industry, as a Chef, Chef Instructor at T.A.F.E. and several food related businesses which I have owned and operated. My passion is cooking and the greatest satisfaction I gain is from imparting the knowledge and skills I have, onto people who share the same passion for cooking and entertaining.
I have represented Australia in the world renowned Culinary Olympics in Germany and have won more than forty medals, thirty of them gold, in various cooking competitions in Australia and overseas.
Once you have mastered the basic skills of the different methods
of cooking you will only be restricted by the bounds of your imagination. Styles and ingredients are constantly changing and the Olive Tree Cooking School can be your source of knowledge to remain up to date with both of these.
The class starts with an in-depth introduction into the world of spice. You will select, store and treat them which is essential to create complex sweet-savory flavors and to justify why Moroccan cooking is often considered one of the world’s greatest.
Cinnamon and sugar spiced chicken pastries. Moroccan spiced flathead skewers with minted yoghurt sauce. Prawn, mussel and chickpea tajine.
Come and engage all your senses in our Moroccan Cooking Class, as you learn how the Moroccans use their colourful and complex spices, such as the famous ‘ras el hanout’, the ‘head of the shop’, the aromatic spice blend which consists of as many as 24 different spices.Â
Meat, seafood and Poultry tagines, couscous, harissa and preserved lemons mixed with nuts and perfumed waters of rose and orange-blossom are just some of the common dishes found in this fascinating country.
This class covers some beautiful dishes heady with spices and fragrances typical of Moroccan Cooking. Chef, Katrina Ryan is sharing recipes that are sure to become family favourites.
