Some of the most appreciated gifts, treats and specialty foods can come from our own gardens and kitchens. This course will give you the confidence and knowledge to make use of everything your garden has to offer.
You will learn how to make the yummiest jams, with minimal use of sugar, how to quickly preserve fruit like plums or pears, how to use the sun or an electric dehydrator to make delicious healthy snacks and, most importantly, how to make your precious creations keep.
This course is held at the peak of the harvest season so that everything students learn is relevant and can be put into practice immediately. Most of the recipes can be used at home with only a medium sized pot, sugar, salt and vinegar plus the produce.

In all of our cooking classes (unless specified otherwise), the tutor typically demonstrates the first night and will then discuss what ingredients students need to bring weekly.
Weekly costs of ingredients approximately $20 – $30 but this may vary as food prices vary and may also depend on what requests students may have for dishes.
With some of the shorter courses, students are to bring the required and specified ingredients on the first night.
Students are welcome to work together in pairs – please discuss your options with your tutor.
Students are asked to supply own tea towels, dish cloths and hand towels.
